Mermaid Sushi Nibbler - 8/1/19
You may remember the Taco Dragon Bandit from last year. This year, we wanted to continue the theme of Tiny Mythical Beings gorging on Massive Food. So, Birthday Girl's second favorite food is SUSHI. And who loves sushi more than Birthday Girl? Only a hungry little Mermaid! This little mermaid can't get her fill of California Roll, just like the birthday girl. This Cake is 100% edible - Vanilla Pound cake fills the sushi roll, with fondant avocado, tuna and rice grains. SO many little rice grains! The outer 'nori' covering is rice paper that has been treated with diluted gel colors (Magic Colours) and corn syrup. It was then allowed to dry and applied to the outdside of the fondant -cvered "Slice". More below. Miss Mermaid is made from a modeling chocolate core (Magic Chocolate), with a thin gumpaste covering. I'm t thinking she, and everyone at the party got enough to eat.
The NIbbler was a great hit at the arcade where the huge cake sushi roll was served and enjoyed by all present! As she is gumpaste, she may be prepared for long-term keeping, in a sealed display, after she has completely dried out.
The birthday girl asked "Where are you going to find a sushi roll THAT BIG?". I told her "the beach!" :-)

This cake was really pretty simple, but it did have a few unique moments. The Sushi Roll was not carved from stacked layers, but rather from circles cut out of the cake and set on edge. The result was covered in fondant, and was quite stable. This made it SO much easier to get that oh-so-nonchalant tip sideways that sushi rolls always do, showing the ricey interior. The Mermaid was indeed gumpaste over a modeling chocolate core, which saved me hours of dry time and stress. In the summer, we use a swamp cooler, so drying things can be very tough! Her tail fin was solid gumpaste, pulled petal-thin on a flower foam, and then propped up with plastic-wrap cushions until it dried as much as it was going to. I then had a blast painting it with edible metallic paints from Magic Colours. Her hair is gumpaste, rolled thin, wrapped around a straw, dried and applied. The fake tuna was a real PITA, I kept getting it too pink, and then too dark! The avocado was similarly an issue, I ended up having to freeze the fondant for it to be hard enough for me to slice with a scalpel. The fake nori was really easy - rice paper daubed with a loose gel-color/corn syrup/water mixture, while resting on an edged cookie sheet. Get it good and wet, with a big brush, allow to dry under a fan. You can also layer colors this way, go light-to-dark. As you see, the whole board was premade and covered with plastic wrap prior to adding cake and buttercream. Nor was the tailfin added until the Mermaid Nibbler was safely lifted onto the board after cake completion.
This cake took me a total of three days, which may be a new record for me!!! Now I need some sushi....
