Jackson Browne & Sara Watkins Planet Earth - 11/14/12 - This cake got to honor two inspirations - both the long favorite and the sudden new! Jackson Browne has been a favorite as long as I can remember, both with his  amazing music and his activism. Sara Watkins is a class act with incredible energy and talent. Together they present a show nothing short of wonderful. This cake has a 100% sugar replica car from "Lawyers in Love", complete with sugar windows, full interior, and LED headlights. It floats across Mother Earth, while silhouettes of Jackson and Sara playing are on top. Avocados, sunbursts, and hippys give thanks to the Guacamole Fund, MUSE, and "Occupy This Album". The inside was a special cake made of low-glycemic coconut sugar and gluten-free flour, with coconut sugar swiss merigue buttercream. It was SO delicious, with no sugar spike! You'd have to try it to believe how tasty a refined sugar-free confection can be. They loved it - Sara ate hers down to the fondant, and Jackson, notoriously sugar-free, even sampled a piece!
