Assorted Pastries - 2/12 thru 5/12 - Assorted pastries, bread, cookies baked while attending the Auguste Escoffier School of Culinary Arts in the Pastry Chef Program. In the Gallery you can see my Cream Puff Swans, Checkerboard Cookies, Chocolates, Baguettes, Princess Torte and several Plated Desserts. The Tart to the left was my Midterm Practical Exam - I received a 94% (forgot my 'Nappage'!!). I have since graduated with Honors, and continue to correspond with the school. I learned so much and my cake is now even better! Thanks to AESCA I have taken the "Best Food Available" point of view and now use the highest quality ingredients possible. The Art continues beneath the Fondant!
